It was already such a beautiful, inspiring day however this just took my runner pride over the top!
I came house with a few goodies from my mom’s Easter dinner. This loot included remarkable gum from the Easter bunny…
…hard-boiled eggs as well as avocados (my mommy has a tree).
I am not opposed to mayonnaise on any type of level…
But I am very partial to avocado so I made a decision to switch out Camiseta AS Roma mayo for avocado as well as make egg salad with avocado for dinner. simple Meatless Monday FTW.
Avocado Egg Salad:
4 hard-boiled eggs (I utilized 2 whole eggs as well as 2 whites)
1/2 cup smashed avocado
to taste: salt, pepper, paprika, garlic salt
Directions: Smash. Eat. Repeat.
